Anubias barteri is one of the toughest, most beginner-friendly plants in the hobby, with broad, leathery dark-green leaves on a sturdy rhizome. Attach the rhizome to wood or rock rather than burying it, and it will thrive in low light with no CO2. Its hard leaves even shrug off nibbling from most fish.
